    New Mexico Big Jim Chile Pepper is the largest chili ever grown according the Guinness Book of World Records. Best known for chiles rellenos, Big Jim is perfect for roasting or stuffing because of its size. It's also great in salsa and salads. With a Scoville rating of 2500-3000, this pepper is reasonably mild. Big Jim is almost always harvested when green, but matured red peppers can be dried and used as ristras
