This hardneck variety is known as Purple Glazer/Russian to garlic lovers.  This variety originally came from Russia many years ago.  This garlic offers a flavor that is strong and lingering but not biting or hot with no aftertaste.  Hardnecks have more complex flavors than the softneck garlic found in your local grocery stores.  You will also find that much of the garlic you find is from CHINA!  Of course I would like you to buy my garlic, but if not at least buy AMERICAN and buy organic whenever possible.  Our food chain is being contaminated with chemicals because growing organically is not cost or labor effective for the mega farms.
True gourmet garlic flavor when cooked and is considered to be the choice garlic of garlic lovers.  It's the perfect addition to soups, stews, sauces, stir frys, marinades, rubs and dips.
Bulb wrappers are thick and parchment like and tightly cover the very few but very large cloves (usually 5-8).  These bulbs measure anywhere between 2 - 4 inches in diameter.  They are easy to peel and dense with flavor - wrapped in white and purplish wrappers.
Inside the garlic cells is an odorless substance called alliin, outside the cells is an enzyme called alliinase which also has no odor.  When the two substances are combined (by mashing or cutting/diving) the cell walls rupture ad the alliin and alliinase combine to form another substance, allicin, which produces the characteristic garlic odor.  The more the garlic clove is mashed, the more allicin will be released and impart a stronger flavor to food.  By contrast, leaving the clove intact or cutting into only a few slices produces a fainter garlic flavor.  Heat can also transform garlic's pungent properties.  When whole cloves are simmered or roasted, the alliin is converted into new substances before they have a chance to react with the alliinase.  This can impart an unexpected sweet buttery flavor to the garlic which we have found when put in a roaster with chicken - if you haven't tried this, you are in for a real treat!!!  You can also precook garlic which can add a delightful, milder flavor to food.  A bulb of garlic brushed with olive oil, sprinkled with salt and pepper, wrapped in aluminum foil and baked at 325 degrees for 1 hour produces a sweet, caramelized product that can be used in a variety of recipes.
Health benefits are:  helps lower cholesterol, increase circulation, and a booster of the immune system.  It is also a powerful antioxidant and may also help lower blood pressure and regulate blood sugar.
We use a 3 year rotation system for our garlic - I ONLY use leaves, garden waste, worm castings and natural fish emulsion in our garden.  Our entire garden is organic and has been for many years as we have an aversion to the chemicals that are so prevalent in our food system these days.
I also have the Music/Porcelain variety garlic listed and if you desire a combination of both in you order I will do so.  Either varietywill store up to 6 months in dry, cool and well-ventilated conditions.
The last 6 pictures show the progression of the garlic beds as they are prepared for planting and being "put to bed" for winter with 6 - 12 inches of leaves piled on top to add insulation from our long cold Wisconsin winters which I believe really enhances the flavor of the garlic.  Then netting is added on top to hold the leaves in place until spring.
